Hi, My name is Nicola, friends call me Nikki.

I was born and raised in England, before my family moved to California. For many years, I worked as a nanny—a role I loved—

but my true passion had always been baking.

At 30, I found myself wondering, Am I too old to go to baking school? When I asked my fiancé (at that time), he simply said, "If you're passionate about it and it makes you happy, you should go for it."

With his support, in 2005. I enrolled at The San Francisco Baking Institute, a renowned French pastry school,

and earned my Pastry Chef Diploma.

After working in a beloved local cakery, I launched my own business, creating custom birthday and wedding cakes—crafting everything from elegant tiered designs to decadent chocolate truffles. During this time,

I also had the joy of volunteering with Cake4Kids, a nonprofit that provides birthday cakes for children in the foster system

—a cause close to my heart.

Now married and living in Mooresville, North Carolina,

I’m thrilled to return to what I love most: baking!

My approach is simple—no shortcuts, no fancy ingredients—

just tried-and-true recipes and classic techniques

that celebrate the beauty of real baking.

I can’t wait to share my love of home-baked goodness with you!
